With little prep involved, this is a great last-minute, easy dinner for the family.
INGREDIENTS
1 ½ pounds cod
Cooking spray
Fresh lime juice
Light mayonnaise
Onion powder
Black pepper
Breadcrumbs
Melted butter
Chopped parsley
Serve it with leafy greens or thinly sliced oven-baked potatoes
Directions
Preheat oven to 425°.
Place fish in a baking dish coated with cooking spray. Combine all the ingredients and spread over the fish.
Sprinkle with breadcrumbs, drizzle with butter.
Bake at 425° for 20 minutes or until fish flakes easily when tested with a fork.
Sprinkle with parsley.
